Econut proposes a future in which invasive species are no longer seen solely as threats, but as ingredients within a regenerative food system. This mobile stand activates that vision, offering edible compositions derived from local species. As it moves, it creates shifting encounters, inviting you to consume, question, and participate in a reimagined relationship between humans and the environments they alter.

The installation becomes alive during special events and opening receptions, where visitors are invited to taste Econuts crafted from locally sourced invasive species. Attendees can experience Econuts during breaks, lunches, or receptions at a mobile future-food stand integrated into the 3-day summit. The stand moves throughout the space, sparking moments of tasting, curiosity, and conversation among participants.

Each Econut flavor is developed using edible invasive species specific to the event’s location. We conduct research and collaborate with local chefs to identify and refine these ingredients. For this edition in Arizona, the flavors are derived from Faxonius virilis (virile crayfish) and filamentous cyanobacteria (Spirulina), both found in regional lake ecosystems.
The flavor unfolds through deep-fried crayfish chips, dusted with blue spirulina and punctuated by dots of mayo, an edible composition that reimagines invasive species as a new culinary future.

The setup takes the form of a mobile food stand circulating around the event space. This tangible experience, tasting the future, invites attendees to imagine a world where human consumption actively contributes to ecological balance, engaging not only the intellect but also the senses.

The Project Concept
Econut proposes an eco-balancing food and movement to suggest eating invasive species in order to reduce our current food industry's negative impact on biodiversity. From designed objects to imagined lifestyles, it inquiries how we may shift our food habits to better work with ecosystem’s resilience and opens up a novel perspective into humanity in its comprehensive context.
About the Event
The New Media Caucus invites you to join us for the 2026 Symposium: Restoration / Regeneration, a three-day in-person gathering exploring the transformative potential of new media art and scholarship during times of planetary and social crisis.
Hosted at the Media and Immersive eXperience (MIX) Center at Arizona State University in Mesa, Arizona, the symposium brings together international artists, designers, theorists, educators, and students to explore how new media practices can contribute to healing, revitalization, and reimagination.
